Tip 200g frozen berries into a pan with 1tbsp icing sugar and a squeeze of lemon juice. Cook for 5-10 minutes until a thick sauce. Keep warm.
Tip 150g plain flour, 2tbsp caster sugar, 2tsp baking powder and a pinch of salt into a bowl and mix. Pour in 150ml almond milk and a dash of vanilla extract and whisk.
Coat a non-stick frying pan in a vegetable oil and add a large tbsp of the batter and cook for 3-4 minutes each side.
Serve with berries prepared earlier.
In a bowl, whisk together the following seasoning ingredients:
1tbsp chilli powder
1/3 tsp black pepper
1 tsp salt
1 tsp sugar
1/2 tsp paprika
1/4 tsp onion powder
1/4tsp garlic powder
1/4 tsp cumin
Pinch red pepper flakes (optional)
In a pan, add some vegetable oil and fry a sliced red onion. Cook for 3 minutes. Add sliced peppers and cook until charred and then add sliced mushrooms.
Serve with tortillas, vegan sour cream, salsa, guacamole and anything else you like!
