Wrap-free wraps!
A wrap without a wrap? It’s possible! Use some sliced turkey, ham, or roast beef as the wrap, and fill it with some cheese, cream cheese, lettuce… anything you fancy!
Pasta salad
Pasta salad is so versatile – you can add anything you like and make it a healthy lunch option. You should over boil the pasta a little when eating the next day to keep it nice and soft. Options such as tuna, peppers, tomatoes, basil, mozzarella, pine nuts, pesto and spinach are all healthy, tasty pasta salad options!
Sandwich kebab
Cut bread (or bagel, pita or croissant) into eight square pieces. Spread with butter, cream cheese or pesto for some flavour. Get a long skewer and fill with the piece of bread and then choose from the following options to make a sandwich kebab: meat, cheese, pepper, tomato, cucumber, lettuce, repeating ingredients and then end with a piece of bread!
Mini quiches to go
Preheat the oven to 180c
Heat oil in a in a pan over medium heat. Add broccoli and season with salt and pepper, cook until tender crisp (about 4 minutes). Set aside.
Whisk eggs, milk and Dijon mustard in a bowl, stir in some cheese.
Divide broccoli mixture between the holes in a muffin tin and then pour the egg mix in each; fill about 2/3 high.
Bake for 30 minutes, until the centre of the cups are set.
Allow to cool, and keep them in an airtight container for lunch the next day!
